Things That Happen To Me These Days...

Dear Prof Azhar,
Assalamualaikum wbt and a very good morning.
I am Nor Izyati Md. Rahim, your USM Food Technology ex-student batch 2006-2010 which was graduated last year in August, 2010. Right now I am working in a health and nutrition communication consultant and would like to ask you some questions on behalf of the Nutrition Month Malaysia 2011, the annual nutrition promotion campaign jointly organised by the Nutrition Society of Malaysia (NSM), the Malaysian Dietitians’ Association (MDA) and the Malaysian Association for the Study of Obesity (MASO).
Recently, I am sure you have watched the advertisement on TV and newspaper about Fonterra (Malaysia) Sdn. Bhd claims that their growing up milk (Anmum Essential) has no added sugar which is very good for the children, and they are the only milk company that does not add sugar in their milk product. This claim has exaggerated the milk industry where most of the growing up milk company are nervous and said that the claim is too much and they have already followed the food act about the necessary amount of sugar to be added in milk.
For your information, right now the Steering Committee (SC) of the Nutrition Month Malaysia 2011 which is chaired by Dr. Tee E Siong, the president of Nutrition Society of Malaysia (NSM) are having discussion and decided to write an article to overcome the situation and explain the truth to the society. The claim has also made the mothers becoming sensitive of the sugar in milk and some of them have opinion that milk is not good as it contains added sugar, thus no need to give their children milk, as recently there are issues about obesity in children. But the SC members think that it is not suppose to happen, as some sugar is also needed and good for children.
We have some questions to ask you as the expert in food processing:
1) As an expert in food processing, what is your opinion on this issue? Prof Dr Azhar: As below.
2) We found that in food labels of milk powder product, they listed ‘lactose’ as the ingredients (but not in fresh milk). Does that mean that they add the lactose instead of having it naturally in milk?
Prof Dr Azhar: Sometimes lactose is added to standardize solid milk.
3) We understand that adding sugar might give some advantages to the production of milk, that is increasing the palatability and also the volume of the milk after being spray dried. But referring to Fonterra (Anmum Essential) case, is it still ok if the milk did not added with any sugar, no matter how and what type of sugar it is?
Prof Dr Azhar: There are other milk in the market that do not list sucrose. It is OK without sugar, it's a choice. really we need to run sensory evaluation to prove a point - added sugar enhances taste, motivating milk drinking, good for their growth.

Salam Nor Izyati,
thank you for the questions.
Yes Anmum is promoting their milk well. However it is all based on perception rather than true value. The value delivered to consumers are simply perceived value. There is no study to support the idea that added sugar in milk is harmful in any way.
If we run sensory evaluation on all the milk on the market then we might find out the reason for adding sugar, that is to improve taste and flavor. Food technologists use their formulation skills to produce milk that is perceived as tasty and nutritious. Not many kids like drinking milk as it is, thus sugar is essential in order to motivate daily consumption. These kids are young and their metabolic rates are high. Consuming milk with added sugar would not cause obesity, in fact the energy obtained from the sugar is used for building tissues and growth.
The other companies could join fonterra, or they can relaunch their milk as products with more carbo-energy for growth (another perceived value). (more views above in green)

Bad Habit #1: Not Enough Calcium
Your mother told you to drink your milk (you didn’t). Your doctor encouraged you to take calcium supplements (you didn’t). Now what? “Your body will lay down bone mass until your early 30s, so if you are in your teens or 20s, you have time to reverse the years of inadequate calcium intake and start building stronger bones,” says Nikki Tierney, a registered dietician in private practice in Quincy, Massachusetts. “If you've passed this age, all is not lost. You may have missed the opportunity to build bone mass, but it is never too late to prevent more bone loss.”
Women who are 19 to 50 years old need 1,000 mg of calcium per day; those 51 or older need 1,200 mg per day. “You absorb calcium best from food sources, so be sure to include these in your diet,” she says. “The easiest way to get your calcium is to get three servings of milk or yogurt each day. If you are looking to add in a supplement, get something with 500 to 1,000 mg, such as calcium chews.” In addition to dairy, you can get your calcium from the following sources: ½ cup firm tofu (204 mg), 3 oz canned salmon (181 mg), 1 cup pinto beans (103 mg) or 1 cup cooked kale (94 mg).
Bad Habit #2: Poor Posture
Misaligned posture can lead to back, knee, hip and neck issues as well as collapsed arches and a host of other problems, says Dana Davis, MA, CYT, a senior certified balance teacher in Petaluma, California. If you’ve had poor posture most of your life, you probably think there’s nothing you can do to improve it. Not true, says New York City–based fitness expert Story von Holzhausen. “You can make changes instantly, transform yourself and don't have to wait to see results,” says von Holzhausen.
She suggests this easy exercise to turn back years of bad posture habits: “Stand with your heels almost touching a wall. Roll your shoulder blades back and drop them down until they touch the wall. Slightly lower your chin and pull the base of your head against the wall, lengthening the back of your neck. Hold this position for 15 seconds, breathe, rest and repeat. Bad Habit #3: Smoking Cigarettes
So you smoked in college—OK, and grad school, and maybe occasionally when you’re socializing. You already feel guilty about it, but what can you do now? “The quickest way to improve your health if you're a smoker is to quit now rather than later,” says Shelena C. Lalji, MD, founder of the Dr. Shel Wellness and Medical Spa in Houston. “Research shows that people who quit smoking when they're in their 30s and 40s have a much lower risk of emphysema, stroke, hypertension and cardiac disease. Medical-grade supplements can help smokers reduce their cravings to increase their success.”
According to the American Cancer Society, after three months of not smoking, your lung function improves dramatically and your circulation is revitalized. After one year of being cigarette-free, your risk of coronary heart disease is 50 percent less than when you were a smoker. One of the best ways to reclaim your smoke-ravaged lungs is to make a new commitment to fitness, says Dr. Lalji. “Increasing exercise both during the transition from smoker to nonsmoker and afterward will help you keep the commitment to yourself while improving circulation, gaining lung capacity and reducing cardiac-related problems.”
Bad Habit #4: Too Much Booze
Do you regret years of excess drinking? While alcohol-related damage to the body can be harmful, and experts say there’s no way to completely reverse it, there are certain things you can do to improve your liver function and overall health. “Drinking can cause fat buildup in the liver, which causes the liver to work harder to metabolize the fat,” says Carlos Tirado, MD, MPH, chief medical officer of Enterhealth, an addiction disease management provider in Dallas.
Help your liver recover by starting a weight-loss regimen and eating a lowfat diet. “In general, eating a diet rich in fruits and vegetables and reducing fat—especially trans fat and saturated fat—can enhance recovery from alcohol-related liver injury,” he says. If you haven’t completely cut alcohol from your life, health experts recommend one drink per day, max, for women, and two for men—though it’s best not to drink daily, so to pick a few days a week that you don’t drink at all.
Bad Habit #5: Being Overweight
One of the leading causes of heart disease—and the number-one cause of death in women in the U.S.—is being overweight. But once you’re diagnosed with cardiovascular issues, it doesn’t mean it’s a life sentence. “Losing weight will significantly reduce this risk,” says Sohah Iqbal, MD, a cardiologist practicing at New York University Hospital. “Weight loss, through a diet and exercise program, can significantly reduce multiple cardiac risk factors that significantly increase the risk of coronary artery disease and heart attacks.”
Weight loss is not only associated with lower blood pressure, but it has also been shown in studies to improve your lipid profile—decreasing LDL (bad cholesterol) and increasing HDL (good cholesterol)—and reduce triglycerides. “Cholesterol buildup in arteries starts at a young age, but if you improve your cholesterol profile later in life, it stabilizes the cholesterol plaque and decreases the risk of it enlarging and occluding the artery or rupturing and causing a heart attack,” says Dr. Iqbal. The American Heart Association says you can reduce your risk of death from cardiovascular disease by 20 percent and ensure your ticker is in optimal health by following their 7-Point Checklist. Bad Habit #6: Exercise Procrastination
You know that old saying: If you don’t use it, you lose it? Well, it’s only partly true, says Sarah Clachar, a New England–based health educator, fitness expert and the cofounder of Fit Family Together. “The opposite is true as well. When you start to use your muscles, you can regain them—at any age. So even if you've never worked out or had muscles to show off, you can certainly acquire them through a good fitness strategy.”
Where to start? Avoid an intense jog or hike, and think weights first. “If you haven't been active for years, your muscles aren't up for the activity,” she says. To avoid injury, focus on strength-training first. “Start by building up your muscles so you have the capacity to do exercise,” she recommends. Also, consider short bursts of intense exercise known as interval training. “Not only is research showing that this has more impact on your health with less wear and tear, but it works faster and it's easier [to do].” Here’s how: “Whatever you start to do, do it in shorter, intensive spurts,” says Clachar. “Walk briskly for 1 minute, then stop and rest. Walk briskly again for 1 minute and repeat. Or bike hard for 4 minutes and then rest.” With this method, you can pack 30 minutes of regular exercise into just 15 minutes, with less injury risk.
Bad Habit #7: Not Eating Right for Years
The antidote for years of burgers, fries and ice cream binges? Eating right, of course. Here’s an easy way to jump-start your health and get the vital nutrients you need without going on a restrictive diet: Eat one salad every day, suggests Brian Zehetner, MS, a registered dietician with Anytime Fitness in Hastings, Minnesota. “The primary reason to have a salad is because it helps to reduce the energy density of the diet,” he says. “You can eat a very large salad for very few calories.”
Plus, you’ll load up on vegetables that can give your body the nutrients it’s crying out for: vitamins C and E, selenium, beta-carotene and lots of fiber. Add 3 ounces of lean chicken, and you have a filling meal. If you eat a salad once a day for a year, you could lose up to 30 pounds without making any other major dietary changes. By just having one salad per day—for lunch or dinner—Zehetner says, your body will feel the difference.
Bad Habit #8: Staying Too Long in an Unhealthy Relationship
According to Howard Rankin, PhD, a clinical psychologist and founder of The Rankin Center for Neuroscience and Integrative Health, a bad marriage or relationship can be as hard on you as any other damaging health choice. “The impact of a negative relationship goes beyond self-esteem, into the very body itself,” Dr. Rankin explains. “Under chronic stress, the immune system breaks down, leading to a whole host of diseases. A recent study of breast cancer patients showed that many women believed that their cancer was caused by stress. Technically, no one gets cancer because of stress. But what does happen is that the suppression of the immune system by prolonged stress makes it more likely that the body can't fight off the cancer and creates an environment where cancer cells can grow.”
How can you get healthy and happy after years of being in a negative relationship? “It’s important to look at all the main relationships in your life and reevaluate which work for you and which don't,” he says. If a decades-long friendship is the culprit, cut the ties. If it’s a boyfriend who treats you poorly, move on. “Recognize that detachment is always difficult but sometimes necessary, and stay focused on the realities of the situation.” One of the best ways to give yourself a boost of happiness—and health—when doing so is to remember that there are infinite possibilities for you out there.
Bad Habit #9: Negative Self-Talk and Poor Body Image
After years of negative self-talk (“Look at how fat I am,” or “No one likes me at work because I’m not talented”), a funny thing happens, says Dr. Rankin: People tend to withdraw from social situations and intimacy. A poor or destructive self-image is also linked with depression and anxiety.
So how do you break the cycle of negativity toward yourself? “The variables that drive behavior are brain biochemistry, innate drives, habits and addictions, and relationships,” says Dr. Rankin. “Note that logic isn't in there. So you need to do things that will optimize brain function—exercise, good-quality sleep, stress management and proper diet all are critical for proper brain function.” And, because our self-image is so often affected by the people in our lives, he suggests you “hang around positive friends and ditch the people who are not on the same page as you.”
Bad Habit #10: Too Much Tanning
Did you once have a love affair with the tanning salon? There may be a ray of hope for sun-damaged skin, say experts. “There is not much one can do to undo serious sun exposure, but it is never too late to protect your skin,” says Pamela Jakubowicz, MD, a board-certified dermatologist at Montefiore Medical Center in New York. She stresses the importance of annual skin checks with your dermatologist or primary care physician.
But you can also take matters into your own hands: “Products containing retinols, soy and some antioxidants have been shown to provide some reversal of sun damage,” she explains. “Retinol is a milder form of Retin-A that makes collagen stronger and can bring about changes in the skin. Researchers believe soy makes the skin lighter when there is pigmentation from sun damage.” Fortunately, you don’t have to spend a lot of money to get products that work. Dr. Jakubowicz recommends Aveeno's Positively Radiant SPF 30 lotion, a product that contains soy, and Neutrogena Healthy Skin lotion, which is made with retinols. Also, consider your diet and activity level, says Marina Peredo, MD, an assistant clinical professor at Mount Sinai Medical Center in New York. “Adding a diet rich in omega-3s and vitamin E is a must, as is a daily exercise regimen to get the blood circulating to the face and other parts of the body.”

Semalam hari yang sangat pack... Subhanallah, tapi saya seronok. Menyertai PIC di Sg. Petani dan berguru sendiri dengan pengasas HPA iaitu Tn. Hj. Ismail b. Hj. Ahmad tentang produk-produk berasaskan herba dan kesihatan keluaran HPA Industries Sdn. Bhd. Sampai pagi ni bahu terasa lenguh-lenguh tapi tak mau tido lepas Subuh sebab nak jadi 'a morning person'... =)
Banyak yang dipelajari tentang produk. Tidak berbahaya dan tidak membawa kesan sampingan. Inilah kejayaan orang-orang yang tinggi tawakalnya kepada Allah dan memanfaatkan setiap peluang yang diberi oleh Allah untuk menyampaikan Islam kepada umat Islam yang sedang lena... Yang pasti, zat yang menyebuhkan itu adalah Sang pencipta sekalian alam... Allahu Akhbar!

Caffeine Health Effects – A Psychoactive Drug

Caffeine is a stimulating chemical that occurs naturally and is used in beverages like coffee and foods like chocolate. Caffeine, the most commonly found psychoactive drug, is consumed regularly by about 80% of the world’s population.
Since caffeine is such a potent psychoactive drug, its effects are under constant observation.
Every year, many studies are conducted to find the real health effects of caffeine. Whether or not caffeine has any health benefits, is still unclear. However, it is known that this substance is addictive and commonly used in many beverages, including the much popular soft drinks.
Caffeine is absorbed by the blood stream almost as soon as it is consumed. It takes our body about 30-40 minutes to completely absorb caffeine. After the initial 30-40 minutes, its effects can be experienced the most.
However, soon after, in about three hours, the psychoactive affects begin to diminish.
Caffeine, in its purest form, is a white crystalline substance which is bitter to taste. It is chemically known as 1, 3, 7-trimethylxanthine. From various studies, it has been proved that caffeine in fact has a strong effect on the cerebral vascular system, as well as the mood and stamina of a person. Caffeine may also have some effect on digestion and the activity of the gastric system as well as the colon (usus besar).
Caffeine occurs naturally in the fruits, leaves and seeds of a variety of plants. Coffee, tea and cocoa beans make up for a major part of the caffeine consumption of an average person. Sometimes, caffeine, because of its stimulating effects, is added artificially to various foods.
The psychoactive stimulation of the drug is so significant that a lot of times, people are not able to function without their first cup of coffee. There may be a feeling of sleepiness and lethargy until the first cup of coffee in the morning. While some people consume coffee simply for the pleasure of its rich taste and aroma, there are many others for whom coffee is much more than a simple beverage.
Research has provided compelling evidence of the fact that coffee is an addictive substance. However, there is a growing body of equally compelling evidence which states that caffeine is in fact not addictive. However, there is no denying that for people who have a habit of consuming large amounts of coffee, omitting it from their diet is a very difficult proposition. There are several withdrawal symptoms when a person tries to refrain from having coffee. The withdrawal symptoms may range from headaches and nausea to difficulty in concentration and depression.
There have been studies which are trying to link consumption of caffeine as a part of high risk lifestyle. Caffeine consumption has begun to be viewed as an impediment to good health. There may be risks of developing heart diseases associated with consumption of caffeine. Evidence also suggests that a heavy intake of caffeine may cause accelerated bone loss, causing irreversible damage and making a person prone to diseases like arthritis.

Aku dan Makanan
Puas memasak + baca Food Packaging... dah 3 hari berturut-turut bubur nasi menjadi menu utama. Bubur ni hanya dimasak dengan bawang putih, sedikit garam dan sedikit kiub ayam. Rasanya...Fuh! subhanallah... simple je tapi berkhasiat dan mengenyangkan. Aku makin loya makan makanan cafe.
Sepanjang Khazinatul Asrar 09 berjalan, aku mengalami sakit tekak (sedikit pendarahan). Mungkin kerana cuaca yang sering berubah dan kekurangan air dalam badan. Ditambah dengan kekurangan tidur (adeh)... Aku hampir demam semasa program berjalan. Makanan sukar ditelan membuat aku malas nak makan (heheh, sapa kenal Izyati, tahulah bahawa perkara itu adalah mustahil! =P) Tapi bila mengingatkan amanah yang dipikul dan juga semangat para urusetia yang bertungkus lumus menjayakan program, aku lawan juga sakit itu. Alhamdulillah, Allah Maha Penyayang. Demam aku kebah juga pada hari yang sama. Cuma sakit kepala tu, biasalah...
Kini sedang menikmati air rebusan halia yang kutahu banyak khasiatnya untuk kesihatan badan. Bila kulihat di pantri, banyak sangat bungkusan makanan segera (mee maggi) dalam tong sampah. MasyaAllah! ini adalah contoh mengkufurkan nikmat Allah. Sengaja memberikan toksin dan racun dalam badan. Akibatnya, belum pun sempat tua, kulit berkedut, rambut sudah keputihan, apa lagi banyak penyakit dalam badan. Diabetes, kencing manis, darah tinggi, sakit jantung, buah pinggang, cancer. Kini kita lihat sekarang bilangan doktor-doktor hospital bertambah disebabkan perkara inilah. Bila dah kronik, salahkan doktor! Bila ahli keluarga mati, dalahkan doktor! Semua salah doktor! habis, yang kamu dok telan makanan yang tak sihat tu pasal apa?
Bukan tak boleh makan mee segera, boleh... tapi berkadarlah. kalo sekali 2 minggu tu kira minimumlah. Kurangkan...kurangkan... Jangan beri peluang penyakit-penyakit datang menyerang badan, espacially ikhwah wa akhawat yang memegang amanah dakwah. Pemakanan sangat penting untuk menjamin tubuh badan yang sihat. Amalkan pemakanan yang sihat. kurangkan minyak, garam dan gula. lebihkan sayur dan buah-buahan dalam gizi. Banyakkan juga bersenam. Kalaupun tak banyak berjogging, berjalan laju juga adalah satu senaman yang simple, ditambah dengan pernafasan yang betul. Banyakkan minum air masak.
Aku juga sedang berusaha mengamalkan. Doakan moga istiqomah, ameen.
Sebenarnya dah tak larat makan makanan kat cafe. Berminyak dan banyak perasa. Setiap kali makan, aku akan terasa loya dan pening kepala. Especially lepas sakit tekak kelamarin. Maka aku mengambil inisiatif masak sendiri. Lebih sihat dan tak memeningkan.

Ginger is been used extensively in the Orient; its benefits covering a spectrum so wide, that it includes the medicinal, culinary as well as aromatherapy fields. A pungent and flavourful spice, ginger is one of the most widely used spices in the East.
Ginger is known to be beneficial to the body in a number of ways. Ginger can be used in its raw as well as dried form. Raw ginger is thermogenic, anti-flatulent, appetiser, digestive and a powerful laxative.

Ginger has extensive uses in aromatherapy as well. Ginger yields an essential oil that is steam distilled from the unpeeled, dried and ground root. Ginger oil is used in combination with sandalwood, cedar wood and patchouli, which renders a woody-spicy scent to the mixture.
The uses of ginger as a digestive aid can be largely attributed to the presence of gingerols and shogaols, which help neutralise stomach acids, enhance the secretion of digestive juices and tone the muscles of the digestive tract.
The active ingredient in ginger is terpenes and an oleoresin, which is called ginger oil. These active agents are responsible for its antiseptic qualities, lymph-cleansing, circulation-stimulating and mild constipation relief. Research has shown that ginger lowers blood cholesterol by reducing cholesterol absorption in the blood and liver.
Other Ginger health benefits
Ginger has been known to reduce inflammation of the joints and muscle tissue for people suffering from arthritis or rheumatism. Ginger improves blood circulation, hence thought to improve the complexion too. It is also known to have reduced nervousness, ease tendonitis and relieve sore throats. Ginger is an effective herbal remedy for all kinds of motion sickness and even morning sickness during pregnancy. A great way to get rid of the uneasy, queasy feeling in the stomach. Scientists have found that ginger can block the effects of prostaglandin - a substance that causes inflammation of the blood vessels in the brain, which leads to migraine. Many women believe that consuming ginger tea during periods helps minimise menstrual cramps. Known for its warming action, ginger is an effective treatment in colds and flu. Aku mendapat assignment daripada lecturer subject "Halal Food Management", yang dalam kuliah agak 'panas' dgn persoalan-persoalan drpd student. Tajuk assignment: Forbidden Animal in Islam and Istihalah in this Products. Aku cukup takut membuat assignment ini sebab belum dapat maklumat-maklumat kukuh tntg Al-Istihalah, sejauh mana ia diterima oleh ulama-ulama muktabar dalam menentukan kehalalan sesuatu produk. Takut menyebarkan maklumat yang salah. Tapi alhamdulillah, mujur lecturer, Dr. Tajul adalah seorg yg open-minded dan sentiasa menerima soalan-soalan dan buka diskusi untuk student2 nya.

Istihala is when something becomes pure. It was najis (impure) but it is now taahir (pure). A good example would be maitah (animal carcass): it is najis, but should it be burned and become ashes, or decompose and become earth, then it is taahir, it is no longer
najis. This can happen with dung or feces or whatever. Whenever something changes from one property to another, then the ruling likewise changes.
Example: Let us say that someone uses the fat of a dead animal to make soap. That fat is najis, but the chemical change that it was put through makes it taahir.
Ibn Hazm put it concisely when he said,
"Ruling upon an object is upon what it is named (what it is), if the name (what it is) changes then so does the ruling."
He also mentioned in his book of fiqh, Al-Muhalla: "If the quality of the substance of naturally impure objects changes the name which was given to it so that it is no more applicable to it and it is given a new name which is given to a pure object, so it is no more an impure thing. It becomes a new object, with a new rule."
Meaning that if the natural composition of a substance changes to another substance of a different composition, so much so that you can no longer call the new substance by the name of what it was-- ruling upon that substance changes too.
Proof/Example 1:
The companions (radyallahu anhum) used to eat a cheese that came from the land of the disbelievers. In that cheese was a part of the calf which was slaughtered by the disbelievers in a way that is not in accordance with Islaam. The companions knew this, but they also
knew that the prohibition was upon the calf, what is directly from the calf, and what could be properly called part of the calf; the ruling is not upon that which you cannot identify as part of the calf nor is it called any longer such-and-such part of the calf. This is called istihala.
Proof/Example 2:
Another proof from the Sunnah: The Prophet (sallallahu 'alayhi wa sallam) forbade making vinegar out of wine, but he said that if you should come across vinegar that has been made from wine then it is halaal.
Why?
The ruling is upon what the object is, and not what it was. Wine is haraam; vinegar is not, and before the wine became an intoxicant, it was halaal. Why? Because it was fruit before that.
Proof/Example 3:
Allah says in the Qur'an:
"And surely there is a lesson for you in the cattle we give you to drink of what is in their bellies from between the feces and blood, pure milk, wholesome to those who drink it." (16:66)
Allah is putting forth an example for us of how something pure can come from something impure.
And we can also use as proof something that we've already gone over. The Prophet (sallallahu 'alayhi wa sallam) said that when the hide of maitah (the carrion) is tanned, then it is taahir. He (sallallahu 'alayhi wa sallam) gave us a method to purify something which was first impure.
Let us examine things we are familiar with: mono and diglycerides, whey, gluten, emulsifiers, gelatin, and whatever else is on the international haraam list. These by-products sometimes come from animals, pigs even, in which case the ruling on the initial substances is that they are haraam. But the initial substances (e.g. fat, marrow, cartilage, etc.) are put through chemical change so that you no longer can even call it "pig fat" or "animal bone" or "skin" or
"cartilage", etc. because it is no longer that, hence it is taahir, it is halaal.
What is gelatin? As Oxford dictionary of science defines: "A colorless or pale yellow, water-soluble protein obtained by boiling collagen with water andevaporating the solution. It melts when water is addedand dissolves in hot water to form a solution that
sets to a gel on cooling." (page 290)
Is this a chemical change or is this not a chemical change? Is it protein any longer? No, it is not.
You are in disbelief so you ask, "But how can it be halaal when it came from something haraam?"
Because of the proofs mentioned above, the ruling is not based upon what it was, the ruling is based upon what it is. A Hanafi scholar, Ibn Abedin gave the example: "the swine which drowns in a salt lake and decomposes and becomes salt itself, is now halaal."
And other Hanafi scholars go on to say: "salt is different from meat and bones. If they become salt, they are salt."
To take the salt example further: salt consists of sodium chloride (NaCl) when together they are the halaal food known as salt, when separated they make up two poisonous substances which are then haraam for consumption.
The ahnaaf (Hanafis) also use as an example the human semen, saying that it is najis, then when it inseminates the egg and becomes a blood clot it is still najis, but when it becomes flesh it is no longer najis. And the ahnaaf are not the only ones who take this position.
The examples are numerous and they extend beyond food:
Yesterday a man was kaafir and going towards Hell, today he is Muslim, so what is the ruling upon him? It is based upon what he is today.
We must be careful when we call things haraam because it is a form of thulm (oppression) . Scholars have said that it is worse that you make something halaal to haraam rather than making something haraam to halaal. This deen Allah has made yusr (easy) let us not make
it 'usr (hard). Wallahu 'Alim.

Friends of Mine
Bismillahi Walhamdulillah…
Ada satu kisah menarik.
“Assalamualaikum, ya akhi…ya ukhti…” handphone sony ericsson ku berbunyi. Lagu Opick Yang pasti, ni bukan jenama boikot.
Aku baru nak terlelap qailullah, tengok skrin.. Huh?
Calling… Xiang Ying.
“Hello, izyati. Sorry for disturbing you aa. Can I ask you some questions?” I heard her voice from the phone.
“Sure, what is it?” gementar juga berbual dengan best student food tech ni. Tapi takpalah. Mesti penting. Kalo tak, dia takkan kol.
“Um, what is the difference between hadis and sunnah? Is there any significance between Al-Sunnah and As-Sunnah? Why is there difference between both? That As-Sunnah is quite saturated in it rite?”
“How to spell Sohih Bukhari? Is it?”
“What is the difference between dalil and nas?”
“What is qias?”
I answered her question as far as I know. For the hadis and sunnah, Al-Sunnah and As-Sunnah, dalil and nas, I told her, it’s just the same thing. The difference is that the Arabic spelling. For the qias, wow… that challenged me to explain Islamic knowledge in English. I just explained about the example, so that she won’t get lost too much. I told her that Islam forbid us to kill ourselves (the rite word is commit suicide). And taking drugs also can lead to death. So, in Islam, it is haraam for us to take drugs as it can kill us. Well I think I need to explain more as there are some drugs used in pharmaceutical things. There is another case for this.
Then I asked her, “Why did u ask me all this?” just to know her. She said, “I’m studying Halal Food Production, that’s why I have all those terms. It’s good to ask ‘alim’ person like you..” then she laughed. I just smiled and said “haha” =)
Well, I think this is a good beginning for me to explain something about Islam to the non-Muslims.. in English, of course. I can still remember when I was in second year. That time was during Ramadhan, we were having laboratory practical together. I was fasting. While waiting for the results of the analysis, we had chat together and suddenly she asked me, “Aren’t you tired of fasting?”
I looked at her face for seconds (actually I was searching for words to answer her!). Then I just explain if u get used to it, you’ll never feel anything about it. Then we chatted about various things about Islam that appeared around her. Unfortunately I’ve already forgotten about her questions. I love it when she asked me questions but rarely she did. She’s a nice person. Maybe I have to be closer to her. May Allah gives her the Hidayah to be a Muslim. Ameen…
Having good relationship with those Chinese friends really benefit me. I don’t know why, but being with them really challenges me to do more and more. If giving chance to seek for group members to do assignments, I will find the Chinese girls. Additional information about studies and improving my communication in English also I learnt from them. For sure, I will speak English to communicate. And luckily Ching Huey wanna be my ‘lousher’ (teacher) for Mandarin Language. Sounds quite funny. But I’m serious in learning Mandarin. Pray for me. It’s good for dakwah in future.
Wah.. she keeps asking me questions. Now about thaharah. It seems that I have to study thaharah again. Beneficial for me also! If somebody think that she’s just using my advantage for her sake, now that's a false thinking. I’m just doing my job, for this is the Tarbiyah for me. Alhamdulillah…

Grape Seed Extract Protects Memory
Results of a new study published in the Journal of Neuroscience (June 2008; 28:6388–6392)ink grape seed extract to a reduced risk of Alzheimer’s disease and other cognitive impairments.
The study tested the hypothesis that certain molecules contained in red wine might offset disease progression in mice genetically modified to develop Alzheimer’s. Results showed the grape seed extract reduced Alzheimer’s –type cognitive deterioration in the mice by preventing the formation of amyloid in the brain. Complex amyloid build-up can lead to Alzheimer’s disease, as well as memory impairment associated with dementia.
“The implications are not limited to patients suffering from Alzheimer’s disease,” said Dr. Giulio Maria Pasinetti of the Research Center at Mount Sinai School of Medicine, New York. “In fact, amyloid is present in everyone’s brain, and whenever it comes together in a more complex structure, it makes the brain function less efficiently. The ability of the compounds found in (grape seed extract) to inhibit the formation of the more complex amyloid structures suggests that ... (it) might even help prevent memory loss in people who have not yet developed Alzheimer’s disease.”
The researchers also note they are now one step closer to understanding the exact molecule in grape seed extract that is responsible for protecting memory and, by extension, closer to testing whether it can be used in patients affected by Alzheimer’s disease.
p/s: but that doesn't mean that we are allowed to 'teguk' that wine!

Let's talk about food ingredients
Bismillahi walhamdulillah.
I've gone through tough days recently. And now i have to go another long journey to continue my desire to put Islamic thinking in everyone's mind. Ok, now what?
Alhamdulillah, Allah always give the chance to do good deeds everywhere. I wanna ask something. Have you ever check a food ingredients at the labelling before you consume the product? Well, i think you should. Everybody is talking about 'halal' food nowadays. There are some food that has the label 'HALAL' at the packaging but if you check the ingredients carefully, sometimes you will find doubtful ingredients written down, such as E471. The status of E471 is 'doubtful' according to the halal haram book, my friend borrowed from the library. I forgot the full title of the book. Nevermind, let's see what it is actually.
E471 is a type of emulsifier where it mixes immicible ingredients together, like water and oil.

E471 Mono- and diglycerides
Origin:
Synthetic fats, produced from glycerol and natural fatty acids, mainly from plant origin, but also fats of animal origin may be used. The product generally is a mixture of different products, with a composition similar to partially digested natural fat.
Function & characteristics:
Emulsifiers and stabilisers.

Acceptable Daily Intake:
None determined.
Side effects:
None known. The body metabolises the products as any other fat. The individual components are also produced normally in the body when digesting normal fat.
Dietary restrictions:
Although mainly vegetable oils are used, the use of animal fat (incl. pork) can not be excluded. Several groups, such as vegans, Muslims and Jews thus avoid these products. Only the producer can give detailed information on the origin of the fatty acids. Chemically the fatty acids from vegetable or animal origin are identical.
And sometimes, the manufacturers label E471 as soy lecithin. Well, for this one i think no need to think twice to eat if there is 'HALAL' label from jakim, from a hadith of The Prophet Muhammad PBUH, he said (Malay version)
: يا رسول الله إن قوماً يأتوننا باللحم، ولا ندري أذكروا اسم الله عليه أم لا، فقال: " سموا الله عليه وكلوا "
Maksudnya : Ya Rasulullah , telah datang suatu kaum memberikan kami daging , dan kami tidak tahu adakah ianya (daging) dibacakan nama Allah atau tidak ? , maka bersabda Rasulullah saw : Sebutlah nama Allah dan makanlah"
As-Syaikh Dr Yusof al-Qaradhawi said in his fatwa :
"Sebahagian ulama mengguna pakai kaedah tersebut dalam meletakkan hukum terhadap makanan yang diberikan oleh ahli kitab kepada muslim , dengan hanya membaca / menyebut nama Allah ketika hendak makan tanpa perlu menyelidiki tentang status makanan tersebut"

"Sesungguhnya , tidak disyaratkan seseorang muslim itu bertanyakan tentang apa yang tidak diketahuinya , bagaimanakah cara sembelihannya , adakah menepati syarat sembelihan , adakah semasa sembelih , disebut nama Allah atau tidak dan sebagainya....Maka , daging tersebut tetap halal dimakan.

Lecithin was first isolated as an orange-colored substance in egg yolk. An important characteristic of this material was that it contained phosphorus, organically bound to a lipid-type structure. Industrial production of lecithin began when the Bollman extraction process enabled large quantities to be obtained from soybeans instead of eggs.
It took scientists a number of years to discover that the isolated chemicals weren’t uniformly structured, but were instead a group of chemically similar, but clearly differentiated, components that are now classified as phospholipids or phosphatides. Scientists also found that this class of chemicals is present in all organic tissue. All of these components can basically be called lecithin, but they may deliver entirely different functionalities in their individual applications.
The active components that all lecithins have in common are phospholipids. These consist of hydrophobic long-chain fatty acids counterbalanced with polar, hydrophilic phosphates. A concentration of phospholipids at the oil-water interface lowers the surface tension and makes emulsification possible. Once this occurs, phospholipids at the surface of the oil or water droplets form barriers to prevent the droplets from coalescing.
Industry employment
Lecithins are nature’s principal emulsifying agents. They greatly speed up dispersion of fatty and aqueous components in many types of food applications, including bread, biscuits, sweet pastries, convenience foods, ice cream, chocolate and margarine.
Confectionery. The most widely known and firmly established application for lecithin is in the making of confections, and chewing- and bubble-gum products. This natural ingredient improves the quality and eating properties of confectionery items and is used for both functional and process-technology purposes. Lecithin has a positive effect on form stability, allowing the addition of increased amounts of glucose syrup for shelf-life extension in chewing and bubble gum. It aids the binding of water in the chewing-gum mass, prolongs flavor release, extends shelf life, improves chewability, releases flavor and produces a fresher gum with enhanced smoothness.
In chocolate manufacture, such as chocolate bars and coatings, it reduces the amount of cocoa butter required, reduces viscosity and yield value of chocolate, improves flow properties, improves shelf life by reducing fat-bloom formation, and prevents sugar recrystallization.
Margarines. Lecithin also is commonly used as an emulsifier in the manufacture of frying, bakery, and diet margarine and spreads. Due to the bipolar structure of lecithin molecules, it helps reduce the surface tension between the oil and water phases. As a result, a homogeneous and fine distribution of droplet size can be obtained in spreads.
Bakery. In bakery products, emulsifiers can help reduce the rate of starch retrogradation—the process under which the starch molecules revert back to their original state as rigid crystalline granules—making the product stale. Emulsifiers also can work with lipoproteins to stabilize dough by forming gluten networks. In biscuits, crackers, pies and cakes, a 1% to 3% concentration of lecithin promotes fat distribution and shortening action, facilitates mixing, and acts as an “internal” release agent, which prevents the mixture from sticking to the pan, a major benefit for shape control.
